1 CUP WHOLE WHAT FLOUR ½ CUP OATMEAL 1 EGG, BEATEN ¼ CUP OLIVE OIL ½ TEASPOON CINNAMON ...½ TEASPOON NUTMEG ½ CUP RAISINS ½ CUP CHOPPED WALNUTS 1 TEASPOON BAKING POWDER 1 TEASPOON SODA ½ TEASPOON SEA SALT 1 ½ CUP MASKED RIPE BANANAS OR CRUSHED PINEAPPLE
Mix all dry ingredients together In a separate bowl, mix wet ingredients well Mix both mixtures together Spoon into greased muffin tins Bake at 400 degrees for 20 - 25 minutes or until done Makes 1 dozen
A wonderful healthy and hearty breakfast with a bowl of fresh fruit also a wonderful snack.
I double the recipe and freeze part of them...they are good with either the banana or the pineapple
